Banana Colada Smoothie

Devin is a big fan of the pina colada, as is her mother — she started ordering virgins as a kid, not realizing how much heavy cream and other hip-expanding ingredients they were full of. This is one of her adult tributes to them: a great breakfast treat or refreshing afternoon snack. Can be made in 30 minutes or less, no more than 20 minutes hands-on prep time.
Servings: 2 servings (about 7 ounces each, makes 14 ounces total)

Ingredients
  

  • 1 cup frozen pineapple chunks or tidbits
  • 1/2 small ripe banana
  • 1/4 cup light coconut milk
  • 1/2 cup fat-free milk
  • 1/4 cup fat-free vanilla yogurt

Method
 

  1. Place all of the ingredients in the jar of a blender with ice-crushing ability. Make sure the lid is on tight. Use the "puree" or "ice crush" setting to blend the ingredients until they are relatively smooth. Then blend on the "liquefy" or "high speed" setting for a few seconds, until completely smooth. Transfer to a glass and serve immediately.

Each serving (about 7 ounces) has: 104 calories, 3 g protein, 21 g carbohydrates, 2 g fat, 2 g saturated fat, 1 mg cholesterol, 2 g fiber, 35 mg sodium.
