Hearty Chipotle Chili

Hearty Chipotle Chili

Servings: 6 servings (about 1 cup each)

Ingredients
  

  • olive oil spray
  • 20 ounces extra lean (99% lean) ground turkey breast
  • 1 small red onion, coarsely chopped
  • 28 ounce can crushed tomatoes
  • 14.5 ounce can diced tomatoes, drained
  • 1 tablespoon + 1 teaspoon chili powder
  • 2 tablespoons brown sugar
  • 1 tablespoon cocoa powder
  • 2 teaspoons chipotle chili powder (found in the spice aisle)
  • 1 bay leaf
  • 1/4 teaspoon hot sauce, or to taste
  • Salt, to taste
  • Black pepper, to taste

Method
 

  1. Heat a large, nonstick soup pot over medium-high heat. Lightly mist it with spray.
  2. Add the turkey and cook it, breaking it into bite-sized chunks as you do.
  3. Add the onion and cook, stirring occasionally, until the onion is tender, the turkey is no longer pink throughout, and there is no excess water in the pan, about 5 minutes.
  4. Stir in the crushed and diced tomatoes, chili powder, brown sugar, cocoa powder, chipotle chili powder, and bay leaf.
  5. Cover the pot with a lid and cook over low heat for at least 2 hours, stirring occasionally.
  6. Stir in the hot sauce and season with salt and pepper to taste. Allow it to cool to warm, then refrigerate any chili not consumed.
