I disagreed with some core dietitian guidelines (the food pyramid, for starters) and realized that formal licensure would require me to operate within a framework I didn’t fully believe in. I chose to be a trained chef who has studied nutrition extensively, so I can meet people where they actually live, not where the guidelines say they should.
