Lean & Loaded Nachos
Ingredients
4 ounces 99% lean ground turkey
1 teaspoon salt-free Mexican or Southwest seasoning
1/8 teaspoon Lo Salt
olive oil spray (propellant free)
2-1/2 tablespoons salsa con queso or nacho cheese sauce all natural if possible, heated (no more than 3 g fat per serving)
1 ounce lightly salted baked tortilla chips (no more than 4.5 g fat per serving and no more than 50 mg sodium per serving)
2-1/2 tablespoons canned no-salt added black beans, rinsed and well drained, then heated
1/4 cup finely chopped seeded tomato
2 tablespoons very thinly sliced jalapeño chile pepper rounds*
1-2 tablespoons coarsely chopped cilantro leaves, to taste
Instructions
In a small bowl, using a fork, mix the turkey, seasoning and salt until well combined. Place a small nonstick frying pan over medium heat. When hot, mist it with spray. Add the turkey and cook it, breaking it to chunks as you do (don’t crumble it into itty bitty pieces) until it is cooked through. Place the chips in a layer evenly covering a dinner plate. Top them evenly with the beans, the tomaotes , then the turkey. Drizzle the cheese sauce evenly over the top. Top with the jalapeno and cilantro. Enjoy immediately.
